I was born and raised in the Philippines but currently live in the Midwest. My mom is a nurse and her job always required her to be with her patients all the time. My father on the other hand was a banker. We grew up being cared for by nannies. My mom would always just give them instructions on meals to prepare. I am the eldest of four children so it became a responsibility for me to feed the siblings. There were times that we didnít have nannies and our dad would cook for us. He was an adventurous cook. Too adventurous that he would put ingredients that didnít really go well with the dish. That is when I started to pick up cooking.
Nothing changed while growing up except for my momís madness for buying too much of everything. Her method of shopping is buying in bulk. She bought too much that we had to buy the biggest chest freezer that would fit in our tiny kitchen. On the other hand, we had to keep up with her by cooking whatever she buys. This is how I learned to come up with dishes using ingredients on hand or substituting ingredients that are not available. We would cook a lot and I mean a lot. We would call our friends and have them eat meals at home. Coming from a close-knit family, reunions were aplenty.
That was before. Now I live in the US but my passion for cooking only became greater than it was before. Now the variety of dishes I can cook are endless. You could almost buy anything in the US Ö. except for Asian ingredients. Here I put my McGyver skills to use. I would substitute ingredients that are not available here with something almost similar as long as it does not alter the taste of the dish too much. I miss my Filipino dishes a lot and I try to fix them every now and then but it is the US version or what others would call Fusion.
