Lol.....I am cutting down myself on the red meats in an effort to lose a few, which is kind of the reason for the thread, I might not be able to eat as much but I can look as much as I want, just another way of enjoying the food.

Thanks Jason, I wonder why it was closed? maybe it had some thing to do with my forced vacation?

Roz, that's perfect bacon if I ever saw any and it eliminated all the splattering and mess, plus the fat draining away from the bacon makes this a health food in my mind.

So, yes this is not a video, but it is still food I love to eat. In America orange trees or more like giant bushes and in Spain they are like giant topiarys with a stall trunk and ball of fruit filled foliage that you can walk under. Is that like Japanese banzai trimming or just a different variety of Orange trees?

Images are fine Nancy, even plain old recipes, those oranges look good. I made a marinade for the dish I'm cooking today with some oranges.

Today I'm trying to cook healthy again, I'm marinating some fresh free roaming, no hormones chicken thighs in a lemon,orange garlic sauce.I'm also making some fresh wild caught pink shrimp on skewers which is marinating in lemon garlic and cilantro. This is all going on the charcoal grill along with whole asparagus in olive oil and garlic sauce. A salad of escarole and San Marzano tomatoes thinly sliced red onions in an olive oil and a Modena balsamic vinaigrette. Sliced hass avacado, and some cannellini beans over white rice. I am serving this with a new wine I'm trying called "The Seeker" it's an Mendoza,Argentine Malbec. I might be motivated to capture this moment on video and post it later.

Since I've been limited by food sensitivities, I'm always looking for different stuff to eat and all of that sounds wonderful. Nothing I"m allergic to. Send me the leftovers.

What left overs? Lol Mary, I'm trying to cook with fresher and healthier ingredients as I made the decision to stop taking Blood pressure medications and statins Cold Turkey, so I'm trying to compensate with healthier ingredients, now that does not mean bland foods or any thing like that, I'm not giving much of any thing up, but I and trying to balance the menu by cutting down on the red meats and starches and being a little more creative.

Good for you, Mario. A couple years ago, I stopped buying anything with any artificial preservatives or colors. I also can't eat wheat, soy (except in small quantities) corn (except corn starch), almonds or oats. Reading labels has opened my eyes quite a bit.

That said, when you get used to eating "real food", the crap just doesn't taste good any more. Before I knew I had a wheat sensitivity, I tried a Twinkie for the first time in maybe 30 years. I used to love them. It was entirely nasty - threw most of it out.

I know what you mean, I really hate processed food of any type and I try very hard to avoid it when ever possible. Reading labels is a real eye opener, if I don't know what the ingredients are I don't want to eat them. I won't even by bread in my bakery, they put like 17 to 23 ingredients when it only requires 4 for really good bread. I'll make my own. The modern food chain is dangerous to our health.

Why would I video myself cooking or eating? I cannot even envision doing this, let alone posting the result.

I don't get "selfies" either.

We eat all organic food, and try to buy local. No red meat. I also eat Kimchi and rice everyday. I'll take photo of it. I may have photos from Ithaca farmer's market.

Robert, if you have to ask why it's obvious you don't get it, food is what keeps us alive, many cultures celebrate the preparation and sharing of their food. The post a video of you cooking or eating your favorite food was just a suggestion, you can share what you enjoy eating or some special recipe without the selfies or video, this is a food thread. I will add additional information in the OP that I had in my other food thread that might shed a little light on why food is important.

Oh well, I could not edit the OP since it's been more than 24 hours, so here is what I posted in the OP of the other thread that was closed. I still feel the same about food so I'm posting it again here.

I equate cooking with art and I have been cooking since I was a child of 8 years old,sculpting started later in my life at age 48 some 5 years ago. I consider myself very fortunate in the diversity of my cultural an ethnic roots which greatly influences my cooking.

I was born in Argentina, my father was from Sicily, my grandparents from France and Spain. To that I add that I lived many years in Miami and I am married to a Cuban wife and I totally embrace each of these cooking styles and others when I cook, which is almost every day!

I don't cook with recipes or cook books, most of what I learned is from watching my mother and father in the kitchen and experimentation. I like to think of myself as a practical cook, not a fancy cook, to me much more important than making a pretty dish is making a tasty one.

I like both simple and complex dishes but I am a true to always using fresh ingredients never frozen or canned, my spices are always fresh and of the highest quality ( I have my own spice business so this really helps). I like cooking with Pigs feet, ham hocks,all most every part of the cow including sweetbreads, cow cheeks, blind intestine ( Chinchulines as we call them in Argentina), octopus, fish heads, snails, blood sausage, kidneys, liver, heart, brain, and much more but not for shock effect but because they are so good when cooked correctly.

Here is a meatless recipe to share....

ROASTED RED PEPPER SOUP 101

INGREDIENTS
3 medium-size red bell peppers
2 tablespoons vegetable oil
1 medium-size onion, chopped
1 clove garlic, smashed
1 pound potatoes
(about 3 medium-size),
peeled and quartered
1 to 2 sprigs fresh thyme
3 cups water
1 teaspoon salt
2 ounces bourbon (optional but
nice)
¼ teaspoon cayenne
¼ teaspoon smoked paprika
A few lemon wedges (optional)

HERE’S WHAT YOU DO:
Preheat the oven to 400°F.
Remove and discard the stems and tops of the peppers and place on a baking sheet. Roast until blistered and charred, 30 to 40 minutes.
Remove the peppers from the oven and place in a sealed bag or container, to help remove stubborn skins, for at least 15 minutes.
With your hands or with the help of a paring knife, remove the seeds, veins, and skins, but do not rinse the peppers. Chop coarsely and set aside.
In a medium-size saucepan over medium heat, heat the oil, then add the onion and garlic. Cook until the onion is slightly softened, about 5 minutes. Add the potatoes, thyme, water, and salt. Bring to a lively simmer, then lower the heat, cover, and cook until the potatoes are fork tender, 15 to 20 minutes.
Remove the thyme, add the peppers and bourbon (if using), and stir in the cayenne and smoked paprika.
Puree until smooth and free of lumps; taste for salt and season as needed.
Return the soup to the saucepan and reheat.
Serve hot, with lemon wedges, if desired, for a finishing touch.

If you have access to a BBQ Grill then by all means toss the peppers on it to roast them... adds an additional level of smokiness...

Hyoye, thanks for those images! Organic is a good alternative, I try to buy as much of it as possible. I do enjoy rice but not as much as my wife who is Cuban, but I do like it especially risotto and the brown and wild rice mixtures. I was reading though about the health benefits and there seems to be different schools of thought on how healthy it actually is. Seems like the big problem is arsenic in the rice, yes arsenic and sometimes as much as 50% more than of the excepted safe levels. So if you eat every day, you may want to research it some. I think it's the brown rice that is highest in arsenic with imported basmati having the least.

Bob, that soup sounds good, I am a big fan of roast peppers and cook them often on a charcoal grill.

Looks great James, I love ceviche and made some just the other day, actually it was the first time this year , I love to eat it on hot summer days as it's so refreshing and living in Florida I know where to get the freshest seafood, that being the key to perfect ceviche.
