Your plan is a solid one. Too often artists try to leapfrog ahead, before they've generated enough work to make a statement -- even to themselves!
Some unsolicited advice (especially if you haven't done them before) -- step carefully when choosing an arts & crafts fair. Speak to someone who's did the show last year, to get a feel for foot-traffic and potential sales. I've been disappointed, more than once, by an arts & crafts fair, where I only sold the magnets and sun-catchers on my table. Or, where the only sales are jewelry and tree ornaments.
If you can find a nice, mid-sized show, with a lot of traffic, that would be great. Even if you don't sell a lot, nothing compares to the experience of face-to-face communication with your potential buyers and fans.
Honestly, I'd do a show every week . . . if they were less time consuming, less strenuous, and less expensive. Okay -- maybe one every month! :-)
