Description
Raddichio. I just love the color and how the light shines through; I simply had to take a photo. Other name is Cichorium intybus. Also known as Italian chicory. It is grown as a leaf vegetable which usually has white-veined red leaves. It has a bitter and spicy taste. In the United States, it is gaining in popularity where it is more often eaten raw in salads.

Thank you, Michel, for your generous and kind comment. This is one of those images that when I make it I love but I question if others will find the beauty in a bit of salad. So pleased to know it is appreciated. :-)
