"Fern Frond" by Debbie Oppermann. The large, beautiful, green Ostrich Ferns, Matteuccia struthiopteris, in Guelph Ontario Canada, are one of my favorite wild, native ferns. Their tightly furled fronds are naturally beautiful and as they slowly unfurl they are majestic. If left alone they grow quite tall and full, but the fiddleheads are a delicacy and of course are available only for a short time in spring. They are healthy with vitamins, minerals, iron, potassium, omega, fibre and are an anti oxidant. The fiddleheads can be boiled, fried or steamed and my favorite is sautg them in a little butter and fresh garlic. Yum!
